Reconnect with Nature: Urban Herbology Apprenticeship Program

For nearly fifteen years, I have been helping people to discover the edible, medicinal and useful plants growing around them. Over that time, hundreds of people have joined me on walks, workshops and apprenticeship courses, each bringing their own questions, backgrounds and reasons for wanting to reconnect with nature.

The apprenticeship has grown alongside them.

Like many long-running courses, it gradually became bigger. New modules appeared. More videos, links, recipes. Every year I added another layer somehow, wanting to share everything I had learned.

Recently, I found myself asking a different question.Not, “What else could I teach?” But, “How do people learn this best?” And naturally, the answer was quite simple. My apprentices don’t learn best by sitting behind a screen, rushing through hundreds of plant profiles or downloading endless PDFs. They have learned best by doing and returning. They tell me they’ve loved walking together through the seasons, sitting around talking over cups of herbal tea, making remedies with their own hands, smelling plants, exploring them, asking questions, sharing discoveries and gradually becoming familiar with the place where they live.

So this autumn, the Urban Herbology Apprenticeship begins a new chapter.

The heart of the course will become ten seasonal workshop days, held throughout the year in Amsterdam. We will spend time together indoors, out on walks, and at my allotment (volkstuin), learning through experience as much as through explanation. Each gathering will follow the rhythm of the season and the plants that are ready to meet us.

Alongside the workshops sits an extensive online library that I have been building for many years. Rather than replacing the practical learning, it supports it. Recipes, videos, demonstrations, downloadable notes and deeper explorations will be there whenever you want to revisit a topic or disappear happily down one of those wonderful herbal rabbit holes.

We’ll explore four connected themes throughout the year.

Urban Plants — learning to recognise and understand the plants growing around us.

The Urban Apothecary — creating safe, practical herbal remedies from local species.

Urban Foodcraft — bringing wild and cultivated plants into the kitchen through seasonal recipes, fermentation and preservation.

Regenerative Urban Living — gardening, biodiversity, household crafts and simple ways to live more gently alongside nature.

Instead of trying to know hundreds of plants, we’ll spend time getting to know around thirty local species really well. By the end of the apprenticeship, you’ll have built your own Urban Materia Medica, created remedies and foods from plants you’ve gathered yourself, and developed a much deeper relationship with the landscape around you.

For me, this feels like a return.

Many years ago, my first apprenticeship groups gathered around my kitchen table before we headed out to forage together. Those days remain some of my happiest memories of teaching. This new version brings that atmosphere back, enriched by everything I have learned since then.

Volunteers Wanted: Help Bring the Stijltuin Back to Life

Do you enjoy being outdoors, getting your hands in the soil, and working together with others on something meaningful?

We are looking for enthusiastic volunteers to help care for and revive the beautiful Stijltuin at Huize Frankendael. Together, we are restoring this historic garden into a peaceful, inspiring place for everyone to enjoy.

Led by Lynn Shore and Tamara Last (English and Dutch spoken), our friendly and international group meets weekly to work on the garden. Whether you’re an experienced gardener or just curious to learn, you are very welcome.

When

Every Monday, 09:30 – 13:00 (year-round)
Join us for part or all of the morning—whatever suits you. We take a relaxed coffee break together in the middle of the session.

What do we do?

Our work focuses on:

  • General garden maintenance (like weeding and pruning)
  • Planting and repositioning to improve the borders
  • Growing plants from seed and cuttings
  • Gradually restoring the garden in a natural, historically sensitive way

We are working towards a planting style that reflects the heritage of Huize Frankendael, while creating a space that feels vibrant and welcoming today.

Who are we looking for?

Anyone who:

  • Enjoys being outdoors
  • Is happy to get involved and learn
  • Would like to contribute to a shared project

No gardening experience is needed, and you don’t have to come every week. Even occasional help—locals or visiting guests—is greatly appreciated.

Then, join me for a walk in Park Frankendael and let me show you what’s around; Learn how to identify delicious and nutritious plants, how to ethically harvest them, and how to use them.

These Walks
The walk will start and end at the same location, near the bike racks closest to Huize Frankendael/Restaurant Merkelbach. We will walk in the woods, alongside water, on grass and other areas of the park – including the foraging gardens which I have nurtured with other volunteers, since 2014. The walk will go ahead in all weather except storms. You will receive a handout to help you remember the plants and uses, and we will drink herbal tea from herbal finds. If you want to take some foraged finds home, please bring along a small paper or cotton bag to take home some herbs and seeds. The walk is gentle and fairly slow, the paths are mostly natural, of woodchip or soil. There is a public toilet in the park. Come prepared to connect simply with urban nature.

Who am I?
My name is Lynn Shore, I have been teaching urban foraging and self-sufficiency skills, in Amsterdam for over 15 years. I am an experienced herbalist and a proud member of the Association of Foragers, and a Trustee of The Herb Society. Over the years, I have led walks for large and small groups (including Greenpeace), work with top bartenders, restaurants, eco-friendly businesses, and community groups.

This April I am take part in the Wildbiome research project where I will live only on foraged food for the month to study the effects on the body. I have special interests in improving Urban Food Security, and mental health through nature connection. I live very close to a Park Frankendael, and know the plants here like the back of my hand.

This walk is in English – I also speak Dutch.

Cancellation Policy
Payments are fully refundable up to 24 hours before the event. If you need to cancel after that time (so less than 24 hours before the event start time) a refund can only be made if we can fill your place with someone else.
